Ingredients:
- 2 cans (13.5 or 14 ounces each) of full-fat coconut milk
- 1 cup of sugar
- 1/4 teaspoon of salt
- 1 teaspoon of espresso powder
- 6 tablespoons of unsweetened cocoa powder
- 1 Scoop of TumLove Low FODMAP & Chocolate Protein Powder
- 3 lightly beaten egg yolks
- 1 teaspoon of vanilla extract
- 72 g toasted slivered almonds or 100g of toasted shredded coconut
Directions:
The night before, pop your ice-cream maker bowl in the freezer to chill.
In a blender, combine coconut milk, TumLove chocolate protein, sugar, cocoa, espresso, salt, and vanilla.
Blend everything until you get a smooth mixture.
Pour the milk blend into a saucepan and heat it over medium heat. Let it come to a light simmer while stirring occasionally (don't let it boil).
Take a large mixing bowl and whisk the egg yolks until they lighten in color.
Gradually stir around 1/3 cup of the warm chocolate-milk mixture into the whisked eggs to temper them.
Slowly add the remaining liquid, mixing it all until perfectly combined.
Pour the mixture back into the saucepan and heat it until the edges start to bubble, which should take about 5 minutes (the mixture will slightly thicken).
Cover the saucepan and place it in the refrigerator overnight for the flavors to meld.
Once the mixture is nicely chilled, give it a good re-whisk to remove any lumps.
Then, pour it into the pre-chilled ice cream container and get ready to churn according to the manufacturer's instructions. It should take around 20-30 minutes.
After churning, you can fold in some toasted almonds or coconut for an extra yummy twist (you can do this by hand).
Now, you have two options: You can indulge in the creamy goodness immediately for a "soft serve" experience, or you can freeze it in a freezer-safe container, covered, for 6-8 hours to achieve a firmer texture.
